At the SharePoint Users conference, your slide deck said your favorite VM included SQL Server 2008. Can you shed some light one what it takes to hook up MOSS 2007 SP1 with SQL Server 2008 (RC0 ?) on Windows Server 2008? How stable is SQL Server 2008 RC0 compared to say SQL Server 2005 SP2 + post-SP2 Hotfix Rollup #8, which is what my Windows Server 2003 R2 dev box uses?

Well, no special jumping through the hoops to get MOSS working with SQL2k8 on a Win2k8 environment.
I found RC0 to be stable enough that in the past few months it has given me zero issues.
The only hookup pains are in reporting services - and guess what - I'm co-authoring SQL2k8 for MSpress and I'll be writing all those steps in there (Also covered in my training).
